Whole Hog & Pork Class

Is it time to tackle a whole hog? Are you interested in entering a whole hog competition? This class will prepare you for cooking a whole hog with confidence, whether you are cooking for friends and guests or a panel of judges.
What will be covered in the class:
- How to prep the pig from the butcher and flatten it out for belly-up cooking
- How to inject the meat and apply the rub
- Every step of the cooking process for turning out tender, mouth-watering pulled pork
- Cooking a pork butt from start to finish to make pulled pork
The methods in this class are intended for barbecue enthusiasts, caterers, and competitors.
About the instructor: Rich has won numerous first place whole hog finishes throughout the Northeast and Southeast in the KCBS and MBN circuits. He’s also been invited to the 2010 MBN World Championship, and the 2010 Jack Daniels Invitational World Championship.
